Tasting Notes
White Catawba grapes sourced from our own Heaven’s View Vineyard as well as Upstate New York produce this honey sweet wine. It presents a mouth-filling sweetness with subtle hints of coconut and aromas of pineapple and melon. It is reminiscent of ice-wine in terms of sweetness. This refreshing wine pairs well with soft cheeses, shortbread, cookies, custard desserts, fresh fruit, lemon desserts and angel food cake.
Winemaker’s Notes
We take great pride in fermenting our fruit wine long and slowly at low temperature, with as little fining as possible,in order to amplify and preserve the natural flavors. We arrest fermentation in order to keep the natural fructose, and then add sucrose, which aides in the fermentation process and maximizes the preservation of the natural sugars for an intense fruity flavor.
