Tasting Notes
Pretty in Pink is made with Catawba grapes sourced from our own Heaven’s View Vineyard as well as Upstate New York. It has the distinct “foxy” grapey flavor of Catawba grapes with lingering hints of strawberry, watermelon and grapefruit. It is a sweet soft blush wine that pairs well with salads, soft cheeses, fresh fruit and spicy curries.
Winemaker’s Notes
We take great pride in fermenting our fruit wine long and slowly at low temperature, with as little fining as possible in order to amplify and preserve the natural flavors. We arrest fermentation in order to keep the natural fructose, and then add sucrose which aids in the fermentation process and maximizes the preservation of the natural sugars for that “foxy” grapey flavor.
